This is a genuinely helpful review, thank you for taking the time to write it after a few brews in. It’s exactly the kind of balanced feedback we need as we grow.

Great to hear the ease of the process and app guidance is landing well. That “no more SCOBY guesswork” point is precisely what we set out to solve, so it’s reassuring to see that come through in real use.

On flavour, your take is fair. Ginger being a standout is something we see a lot, and Original as a base for DIY flavouring is exactly how we designed it to be used. We also take the comparison to store-bought seriously, that’s the benchmark, and we’re continuously working on pushing depth and complexity across all our bruu bases.

A few of your points are particularly useful to call out:

Tap durability / leaking: this shouldn’t develop into an issue over time. If you ever notice consistent dripping (beyond the occasional post-pour drip), please reach out, we’ll always take that seriously and make it right.
Carbonation dropping after ~2 weeks: that’s broadly in line with how natural carbonation behaves once you’re pouring regularly, but we’re actively working on ways to help it hold for longer in real home use.
Fridge space: completely fair, it’s a trade-off of having a larger batch on tap rather than single-serve bottles.
Flavor shots vs DIY: you’re thinking about them exactly right. They’re there for convenience and consistency, not as the only option. A lot of customers end up doing what you’re doing, mixing in juices, syrups, fresh ingredients and that flexibility is a big part of the system.
Cost + longevity: also a fair and honest framing. It’s not purely a cost-saving product, especially upfront. It’s about freshness, control, and the experience of making your own. On durability, we’ve designed the system for long-term use, and we’re continuing to build out how we support customers beyond the first year as we scale.

Really appreciate the recommendation at the end and we hear you on wanting more bruu bases. That’s a big focus for us this year.

Hi Nichole, Thanks for taking the time to share this, I’m really sorry your first batch didn’t land how it should. What you’re describing (very light, almost sparkling-water-like) usually points to an under-developed brew rather than how it’s meant to taste.

A couple of things that can make a big difference:

Brew time – letting it run a little longer (even an extra 12–24 hours) builds more depth and that signature kombucha tang
Room temperature – cooler kitchens can slow fermentation and lead to a weaker result
Mixing/shaking at the start – helps fully activate the yeast so the brew develops properly

The Original (plain) is intentionally lighter and more versatile. It’s designed as a base you can drink as-is or build on with flavor shots, but it should still have a clear kombucha character on its own, not feel like plain fizzy water.

On the support side, you’re right to call out the delay, that’s on us. We’re a small team and scaling quickly, but that’s not the experience we want you to have.

We’re really sorry to hear your experience has been frustrating, that certainly isn’t what we want for anyone using Bruusta.

It sounds like something may not have sealed correctly during setup, which can cause pressure to build during fermentation and make the keg difficult to remove from the base. The handle should also fit securely without needing excessive force, so it shouldn’t feel difficult to attach.
